Many Chinese restaurants in the US are not considered authentic by native Chinese. They are called jaap6 suei3 gun2 (什碎館) among Chinese American. These restaurants are mainly run by early Chinese immigrants (dated back to the 19th century) and their descendents who cater to the taste of the Americans. With more and more new immigrants from China, more authentic Chinese cuisines are available in major cities. However, mom and pop places are still selling "chop suey"--a dish invented in the United States--and Egg Foo Young in smaller towns. The [fortune cookie]? was an American invention from these restaurants. However, fortune cookies are so popular in the US that even authentic Chinese restaurants serve them as dessert.
