Mariniation is the process of soaking foods in a seasoned liquid (the 'marinade') before cooking. The marinade often consists of a vinegar (or other acidic liquid) and oil mixture. It is commonly used to flavor foods and to tenderize tougher cuts of meat. The process may last anywhere from seconds to days.
